LA COPETA

The Copeta, or "cupeta" in the Salento dialect, is a delicious almond biscuit made from a hot mixture of ingredients such as sesame seeds, almonds, honey and sugar. Copeta is a sweet of Arab origin, typical of some areas of Puglia, Calabria and Sicily; in the Brindisi area it is mainly produced in the towns of Francavilla Fontana and Latiano. The Copeta is produced according to an ancient method, which consists in rolling out the dough slowly until it cools down.
In ancient times, the copeta was cut into different shapes depending on the occasion. In one of the most common cases, it was given in the shape of a little horse as a gift to a young man about to leave for the army.
