Frisa

Among the delicacies you can enjoy in Puglia, the Frisa, also known as Frisedda, is  characteristic. It is an oven-baked product made with durum wheat flour. It can be in the shape of a small doughnut or a galette and has a surprisingly long shelf life. The Frisa dough is baked twice to give it its irresistible crispness: first in the oven, then cut in half and baked again. Ideal for hors d'oeuvres, you can enjoy the flavour of Frisedda by dipping it in water for a few seconds and seasoning it with a drizzle of extra virgin olive oil, cherry tomatoes, a pinch of salt and oregano. It is a simple recipe, but of exceptional flavour, which, according to some ethno-gastronomes, dates back to ancient Greece and the Mycenaeans.
