Cartellate pugliesi

Cartellate Pugliesi are rolled strips of dough whose zigzag edges create a rose-like shape. Typical of the Christmas season, in Apulian popular culture the strips represented the wrapping ribbons used to wrap the baby Jesus. Pugliesi are very simple to make - the ingredients are extra virgin olive oil, 00 flour, white wine, sugar and salt, all cooked in a bath of boiling oil - and they do not disappoint in terms of flavour, which is particularly strong, especially in the versions with chocolate, honey, almonds or vincotto.
